Chicken Noodle Soup / Chicken Chow Mein
A really quick and easy meal.
For chow main use extra noodles to produce a noodle dish - all the stock will absorb into the noodles.
For chicken soup add more vegetables and leave out the noodles.
Try adding fresh chopped chilli to spice it up.
Preparation time: 10 minutes Quantity: Serves 2 - 3 or 4 small bowls Cooking time: 15 minutes
Ingredients
1&1/2 pints/ 850 ml chicken stock
60g/ 2 oz diced or shredded chicken
2 diced spring onions
120g/ 4 oz small diced assorted vegetables (optional)
¼ packet /65g egg noodles (any type)
2 teaspoons light soy sauce
seasoning
60g/ 2 oz beanshoots- if making chow main
Method
- Boil the chicken stock
- Add all except the noodles, simmer for 10 minutes
- Add the noodle and cook for a further 5 or so minutes until the noodles are soft and the vegetables cooked
- Variation - Just before serving bring to the boil and whisk in an egg, the egg will turn to strands for an authentic egg noodle soup
