Japanese Style Sausages Smoked Tofu, Teriyaki and Sweet potato
A vegetarian sausage recipe, totally unique and tasty - serve with a side portion of sesame stir fried carrots. For other vegetarian sausage recipes see Greek style and Mexican style sausages.
Preparation time: 1 hour + Quantity: Makes 8 portions Cooking time: 10 - 15 minutes
Ingredients
2 sweet potatoes (200g+)
1 teaspoon sesame oil.
1 tablespoon Teriyaki sauce
1 teaspoon mirin (optional)
1/2 minced diced onion
1 clove crushed garlic
200g smoked tofu crumbled/very small dice
2 finely chopped spring onions
1 medium egg
80g fresh breadcrumbs
1/ -teaspoon salt
15 twists black pepper
Method
- Bake the sweet potatoes in their skins for 30-40 minutes until soft
- Cool slightly
- De-skin and mash with a fork the sweet potato flesh, add the sesame oil
- Add all else and mix well - if mix is to wet add few more breadcrumbs
- Stuff in to Vegetarian skins or roll and cover in breadcrumbs or
- To Breadcrumb – 1st coat in flour, 2nd coat in beaten egg and 3 rd coat in fresh breadcrumbs
- Cook by baking in the oven or deep-frying
- Or roll individual sausage shapes in cling film and stem till cooked/ firm
