Irish Style Sausages Pork and Guinness
If you like Guinness try the chocolate and Guinness cake- the inspiration for these Sausages.
These Sausages can be a little bitter so sweeten them up with a rich sweetened onion gravy and a big dollop of creamy mash.
Preparation time: 1 hour + Quantity: Makes 8 - 10 portions Cooking time: 10 - 15 minutes
Ingredients
500g minced pork
150 ml/5 fl oz Guinness
2 tablespoons olive oil
1 finely diced medium white onion
2 sticks finely diced/minced celery
1 cloves crushed garlic
1 tablespoon Worcester sauce
80g fresh soft white breadcrumbs
1 tsp chopped curly parsley
1/3 teaspoon salt
15 twists black pepper
Method
- Marinate the pork in the Guinness overnight with 10-12 twists black pepper
- Heat up the oil and cook the onions gently to softer without colour
- Add the garlic and celery stir for a minute to soften
- Cool
- Add to the marinated mince pork and mix in with your clean hands
- Add all else and leave to infuse the flavour for at least 20 minutes or overnight
