Caribbean Style Sausages Jerked Pork
There’s nothing like the taste of Jerk Seasoning you can either make your own (see Cookery Club recipes) or buy ready made. These sausages work well cooked outside on a wood fired B.B.Q served with simple salads. Beware of the spiciness!!!
Preparation time: 1 hour + Quantity: Makes 8 - 10 Cooking time: 10 - 15 minutes
Ingredients
500g minced pork
1 tablespoon wet jerk seasoning
1 tablespoons groundnut oil
1 minced/finely diced red onion
1 clove crushed garlic
1/2 red chilli diced plus seeds (optional)
60g fresh breadcrumbs
1/3 teaspoon salt
15 twists black pepper
Method
- If time mix the jerk spice in to the pork and leave to marinade overnight
- Heat up the oil
- Cook the onion gently to softer without colour
- Add the garlic, stir for a minute to soften
- Cool
- Add to the minced pork and mix in with your clean hands
- Add all else and leave to infuse the flavour for at least 20 minutes or overnight
