Cheese Stuffed Burgers

I use a burger machine at home. They cost as little as a fiver and are usually sold with wax discs. They make the process very easy and make the burgers look professional and of course hold them together well.
The beef can be replaced with minced chicken, lamb, pork or Soya. Try a different cheese with the different meats like Beef and stilton / Chicken and Cheddar / Lamb and Brie / Pork and Emmental etc.

  Quantity: makes 6 quarter pounder-ish  

Ingredients

Burger Mix -
1 red or white onion - finely chopped or grated
1 cloves garlic - crushed
1/2 teaspoon paprika
1/2 teaspoon cumin (op)
1/2 teaspoon ginger (op)
450 g/ 1 lb. - minced beef
1 whole egg – medium or large
60 g / 2 oz fresh breadcrumbs
1 tablespoon tom puree (op)
seasoning

Filling -
6 cheese slices

Tip - slice the cheese by hand from a quality cheese block (no plastic please)
Roughly - 4 cm x 4 cm and 2/3 cm thick

Cheese choice -
Try mature cheddar or go blue with stilton, gorgonzola, cashel or go brie or go goats or you can even go flavoured cream cheese!

Method

  • Mix all the ingredients for the burgers together and season well
  • Mould in 6 patties but
  • Stuffing a slice of cheese in the middle of each one.
  • Press the burger together firmly, ensuring all the cheese is covered
  • Grill, bake, chargrill, BBQ or shallow (dry) fry them.
