Duck in Mirin

For a different version cook the Duck breast whole and baste in the sticky mirin sauce.

Preparation time: 5 minutes   Quantity: serves 2   Cooking time: 10 minutes

Ingredients

1 tablespoon vegetable oil
1 large duck breast - cut in to slices
2 spring onions

Sauce –
60 m / 4 tablespoons light soya sauce
45 ml mirin / 3 tablespoons mirin
30 g / 1 oz / 2 tablespoons caster sugar
2 cloves garlic – crushed

Method

  • Heat the oil in a frying pan.
  • Fry of the duck slices until just cooked but pink in the middle.
  • Remove and fry of the spring onions, until soft and a little golden.
  • Place the sauce ingredients in the frying pan. (don’t clean the pan )
  • Bring to the boil and simmer until the sauce thickens and reaches a caramel consistency.
  • Throw in the duck and spring onions, mix together until the duck is coated and warmed through (only a minute).
  • Serve as part of a Bento box or Japanese Tapas or serve as a main course with some sticky rice or fried noodles.
