Polenta with Parmesan
Polenta is made from polenta flour, but for a quicker version use instant polenta its ready in 5 minutes. Serve instead of mash or set in a tray, cut in to fingers, circles or wedges and grill, bake or fry.
Preparation time: 10 minutes Quantity: Serves 3 - 4 Cooking time: 40 minutes
Ingredients
1& 1/2 pints / 850 ml water
1/2 teaspoon salt
2 teaspoons olive oil
175g / 6 oz polenta flour
100g / 4 oz butter
200g / 8 oz fresh parmesan - grated
freshly ground black pepper
Method
- Bring the water to the boil with the salt and oil
- Pour in the polenta, stirring all the time, beating as it gets thicker
- Turn the heat down and cook on a low setting for 30 - 40 minutes, until thick and and coming away from the sides
- Beat in the butter
- Stir in the cheese
- Season with pepper and salt if needed
For instant polenta follow the same method but only cook for a few minutes
