Ciabatta - Italian Olive Oil Bread

A classic Italian olive oil bread - perfect for grilling and serving with a saucy dish or serving with a election of salads or a big bowl of creamy pasta.

Preparation time: 20 minutes plus lots of proving time   Quantity: Serves 8   Cooking time: 40 minutes

Ingredients

450g/1lb strong white flour
pinch salt
1 teaspoon dried yeast
8 tablespoons olive oil
400 ml lukewarm water (37*)

Method

  • Sift the flour, yeast and salt in a bowl
  • Mix in the water and oil to make a thick batter
  • Cover with a damp tea towel and leave somewhere warm overnight or about 6 hours
  • Till sticky and aerated
  • Spoon the mix in to a greased tin and leave to rise somewhere warm again for 30-40 minutes
  • Bake in a preheated oven gas 7 / 220*c / 420*f for 30-40 minutes
