Savoury Italian Muffins

A Savoury muffin to add to snack boxes, picnics and buffet tables.

Preparation time: 10-15 minutes   Quantity: Makes 12 medium muffins   Cooking time: 25 minutes

Ingredients

1 small pepper – roasted and sliced
375g/ 16 oz/1lb self raising flour
1 medium/large egg
300 ml milk
80 ml olive oil
60g/ 2 oz grated cheddar cheese
20g/ 3/4 oz Parmesan cheese
60g/ 2 oz diced olives
30g/ 1 oz diced sundried tomatoes
2 tablespoons chopped basil leaves (op)
30g/ 1 oz extra cheese for the top

Method

  • Sift flour, stir in egg, milk and oil
  • Stir in cheese, olives, basil and tomatoes

spoon into cases

  • Top with the pepper slices and the extra cheese
  • Cook for 25 minutes in a medium oven
