Stem ginger figs with Amaretto Mascarpone cheese

A really simple, yet delicious dessert - baked fresh Figs are a real treat.

Preparation time: 10 minutes   Quantity: Serves 4   Cooking time: 15 minutes

Ingredients

2-3 pieces stem ginger small diced
2 tablespoons of the syrup
2 oz/ 60g caster sugar
5 fl oz water
8 ripe juicy figs
1 pot/ 250g Mascarpone cheese
8 Amaretto biscuits
1/2 oz/15g caster sugar

Method

  • Put the ginger, syrup, sugar and water in to a pan
  • Bring to the boil and boil for 5 minutes or until it makes a sticky syrup, not caramelized but gooey
  • Cut the figs with a cross on each top going 1/2 way down but not all the way through- to open up the middles
  • Place in an ovenproof dish
  • Pour on the syrup and bake for 10 minutes
  • Mix the Mascarpone with the Amarettos and sugar
  • Serve with the hot figs and syrup
