Amaretti Espresso Cups

Simple executed but temptingly divine.

Preparation time: 20 minutes   Quantity: Makes 4 large cups or 6 espresso cups  

Ingredients

12 Amaretto biscuits
100 ml/ 4f l oz espresso coffee
2 teaspoons caster sugar
2 tablespoons Amaretto liqueur
1 tub/250g Mascaponi cheese
75g/ 3 oz caster sugar
280-300 ml double cream

Method

  • Crush the biscuits, roughly and divide between 4 tea cups or glasses
  • Stir together the coffee,1st sugar and Amaretto
  • Pour over the biscuits in cups
  • Beat the Mascaponi with the 2nd sugar and cream
  • Spoon on top of the cups
