Fruitti a la Vanilla

A really good looking dessert and surprisingly easy, once achieved - of course.

Preparation time: 30 minutes plus setting   Quantity: Serves 10-12  

Ingredients

1 vanilla sponge
2-3 tablespoons strawberry jam
450g/ 16 oz mixed soft berries/or fruits
200 ml/7 floz stock syrup
1 vanilla pod-or extract
15g/1/2 oz gelatine
500 ml/15 fl oz whipping cream
2 tablespoons apricot jam or glaze
1 tablespoon water

Method

  • Cut the sponge in 1/4inch layers and sandwich 2 together with jam
  • Cut the sponge sandwich in to finger sized lengths that will layer a tin (9-12inch)
  • Cover the whole of the bottom and sides with the sponge so you will see when turned over, layers of sponge with jam in-between(striped)
  • Melt the stock syrup with the vanilla and gelatine till dissolved
  • Cool- till nearly set
  • Meanwhile whip up the cream to a soft whip
  • Gently stir in the gelatine mix
  • Spoon on to the sponge base
  • Sprinkle with the fruits and push in to the cream mix
  • Smooth of the top
  • Leave to set for a few hours or overnight
  • Turn over on to a plate- so the sponge is at the top, and the filling is covered
  • Glaze with melted/just boiled apricot jam and water
