Pasta - Linguini with Lobster, Chilli and Parsley
A quick and easy pasta dish.
Try omitting the lobster for Crab or Prawn or the Linguini for Spaghetti or Tagliatelli
Preparation time: 5-10 minutes Quantity: Serves 4 Cooking time: 10-15 minutes
Ingredients
450g/ 16 oz linguini or spaghetti
3 tablespoons olive oil
1 red onion-finely chopped
2 cloves crushed garlic
1 red chilli- finely chopped-seeds removed
1 lemon juice
1 lime juice
1 tablespoon chopped flat parsley
150g/6oz cooked lobster meat -diced
Method
- Cook the spaghetti in a large pot of boiling salted water
- Drain
- Meanwhile -heat 1 tablespoon of oil, fry of the onion-till soft without colour
- Add the garlic and chilli- cook for a few seconds
- Add the juices, parsley and lobster
- Add the pasta to the pan, the rest of the oil- stir and serve
