Roasted Romesco Dip
Serve dolloped on to Bean Burgers, or as a dip with toasted ciabatta, or as a starter with Grilled Hallomi and olives.
Preparation time: 15 minutes Quantity: Serves 4-8 as a dip Cooking time: 30 minutes
Ingredients
2 red peppers
2 cloves garlic
5 plum tomatoes
2 thick slices stale bread
60-80g whole almonds
3 tablespoons olive oil
1 teaspoon smoked Spanish paprika
4-5 leaves basil
1/4 teaspoon sea salt
5-6 twists black pepper
Method
- Place all the ingredients in a roasting dish
- Toss well
- Bake for 25-35 minutes
- Blend in a food processor
- Adjust the seasoning, add more oil if required and serve
