Spaghetti Special

Preparation time: 30 minutes   Quantity: Serves 4   Cooking time: 20 minutes

Ingredients

455g Spaghetti
5 medium sized tomatoes
2 handfuls fresh basil
1 cup black or green olives
1 flat teaspoon dried oregano
2 tablespoons balsamic vinegar
6 tablespoons olive oil
2 cloves of garlic
40g butter
100g Pancetta

Method

Bring a pan of water to the boil, add spaghetti and cook as per packet instructions

  • Put chopped tomato, olives and basil into a bowl
  • Add balsamic vinegar and olive oil
  • When the pasta is cooked drain the water and put pasta in a pan
  • Fry the pancetta in the garlic and butter
  • Add the tomato mix and pancetta to the pasta so that the pasta heats it with it's residual heat
  • Serve with parmeasan cheese on top as desired.
