Lemon Zesty Crumbs

A zesty crumb topping to go on vegetables,fish, meat, pasta, risotto and bakes.
Try sauté courgettes with lemon crumb topping- finish of by baking in the oven for 10 minutes. Or place on top of a piece of fish i.e.-cod- place crumbs on top of raw fish- bake for 20 minutes and serve.

Preparation time: 5 minutes   Quantity: Serves 4  

Ingredients

2 tablespoon olive oil
125g/ 5 oz fresh bread crumbs
2 cloves crushed garlic
2 tablespoon chopped flat parsley
2 lemon zest- grated or chopped

Method

  • Gently heat the oil
  • Add the crumbs and cook to a golden brown
  • Add the garlic, parsley and zest
  • Cook for a further 30 seconds or so


Use -
Try panfried aubergine layers with beef tomatoes and mozzarella- with the crumbs between the layers- bake for 20 minutes till melted
