Thyme and Parmesan Griddled Polenta
A great alternative to bread or starchy potatoes. This can be made the day before and simply griddled to order. These can also be deep fried
Preparation time: 5 minutes Quantity: Serves 5 - 6 as a side dish Cooking time: 10 - 12 minutes
Ingredients
2 & 1/2 pints / 1400 ml water or stock
2 tablespoons olive oil
good pinch salt
few twists black pepper
300g / 10 oz instant polenta (loose granules)
30 g / 1 oz parmesan - grated
1 tablespoon fresh thyme - chopped
Method
- Bring the water to the boil
- Add the seasoning and oil and turn down to a simmer
- Pour in the polenta slowly, stirring all the time, beating out any lumps
- Add the thyme and parmesan
- Cook for a few minutes more, stirring all the time until thickened and the cheese melted
- Pour in to a oiled shallow bowl/ tray, container
- Leave to cool and set
- When needed, turn out and cut in to wedges, slices, fingers or even cut in to circles
- On a hot oiled griddle cook until light brown with scorched lines
- Alternatively pan fry in a little oil, deep fry or even grill till crispy
