Panzanella - Italian Bread Salad

Panzanella is a scrumptious refreshing Tuscan bread salad. Perfect with chared-meats or Fish. For a Vegetarian option try Hallomi Kebabs on the B.B.Q served with Panzanella.

Preparation time: 20 minutes   Quantity: Makes 4 portions  

Ingredients

450g stale rustic white bread- sliced
6-8 basil leaves
4 fresh plum tomatoes, peeled, seeded and chopped
1 red onion sliced or diced
1 tablespoon chopped flat parsley
1 teaspoon red wine vinegar
3 tablespoons good olive oil
seasoning

Method

  • Dip the bread in cold water, then carefully pat it dry with a towel - without breaking it up
  • Put the bread in a bowl and mix in the remaining ingredients
  • Let the salad stand for ten or so minutes to give the bread time to absorb some flavour
