This is a really basic tomato sauce which can be used as a pizza topping, with pasta or as a sauce with your dinner. Pitta bread is a good base for easy pizzas.

Preparation time: 10 minutes   Quantity: Serves 4 - 6   Cooking time: 30 minutes

Ingredients

1 tin plum tomato
1 tin of water
1 onion - peeled and chopped
1 stick celery - chopped
2 cloves garlic - sliced
2 carrots - peeled and chopped
1 red pepper - chopped
¼ tub tomato puree (3 tablespoons)
salt and pepper
1 tablespoon fresh herbs - chopped

Method

  • Put all ingredients a large pot except the puree and simmer for 30 minutes until all soft
  • Blend or liquidise
  • Add the puree, this will add colour, thickness and shine
  • Taste, season and Serve
  • this will last in the fridge for 3 days or freeze for 3 months
