Did you know that Coronation Chicken was invented by Constance Spry? and was first served at the Queen's Coronation lunch in 1953.
Its a good dish to use up left over chicken, stuff in to Pittas or serve with an oven baked potato.

Preparation time: 10-15 minutes   Quantity: Serves 2   Cooking time: 1-2 minutes

Ingredients

1/2 onion finely chopped
1 clove crushed garlic
1 teaspoon curry powder
1 tablespoons mango chutney
3 tablespoons mayonnaise
100g or so of shredded or diced cook chicken
1 teaspoon sultanas

Method

  • Sauté onion and garlic until soft
  • Add curry powder cook out for 1-2 minutes cool
  • Add mango chutney and mayonnaise
  • Mix in shredded or diced cook chicken and a few sultanas
