Egg Fried Rice
Preparation time: 5 minutes Quantity: Serves 1 Cooking time: 10-12 minutes
Ingredients
30g/ 1 oz of assorted finely chopped vegetables like carrot, pea, garlic and ginger (but you can use anything)
60g/ 2 oz of cooked plain rice
1 small egg
seasoning
Method
- Wok fry in oil the assortment of finely chopped vegetables
- Add cooked plain rice, cook till warm
- Crack egg in a bowl and pour in to the centre of the rice
- Sir-fry till the egg is cooked and well coated in the mix. (3-4 minutes)
- Serve with a sprinkling of herbs or crushed nuts
