Spanish Tortilla - Tapas

A Spanish style Omelette - good served warm or cold. Use a small deep frying pan which can be put in the oven - or transfer on to a baking tray

Preparation time: 20 minutes   Quantity: Serves 4   Cooking time: 20 minutes

Ingredients

1 tablespoon olive oil
1 sliced onion
2 large potato peeled cut in 1/2 and sliced
8 beaten whole eggs
seasoning

Method

  • Sauté the onion in olive oil till soft
  • Add the potato slices and cook on a low flame to 1/2 cook without colour
  • Pour on the beaten whole eggs
  • Cook for a few minutes on top of the stove and then finish of in the oven
