You can add a few drops of any vinegar to help the eggs stay together.
My children like healthy ham, egg and chips -using a poached egg, lean ham and fresh potatoes, cut in to chips (skin-on) and basted in olive oil- bake in the oven for 30-40 minutes till golden.

Ingredients

fresh eggs
water
salt
vinegar (optional)

Method

  • Bring a pan of salted water to the boil take off the heat and add a cracked whole egg
  • Put back on to boil for 2/3 minutes for soft or 5/6 for set
  • Spoon the egg out drain a little and serve on toast, with fish or on top of a salad with crispy bacon and croutons etc.
