Garlic Jacket Wedges
A great tasting snack, potato accompaniment or party food served with a couple of dips.
Try plain potato wedges or other flavours like herbs, ginger, paprika, curry paste-anything goes.
Preparation time: 5 minutes Quantity: Serves 3-4 Cooking time: 30 - 40 minutes
Ingredients
2 large potatoes
2 tablespoons olive oil
2 cloves crushed garlic
salt and pepper
Method
- Cut each potato, skin on into wedges length ways around 6-8 pieces per potato
- Place in a bowl and drizzle with olive oil and crushed garlic
- Season well, toss and then place on a tray skin-side down
- Roast in a preheated oven gas 6 for 30-40 minutes, till soft and golden
