A great side dish with any meat or fish, or simply served as a vegetarian dish with rice or potato. It can even be served cold as a salad.

Preparation time: 15 minutes   Quantity: Serves 4   Cooking time: 30 - 40 minutes

Ingredients

2 tablespoons olive oil
1 large red onion diced
3 cloves garlic crushed
1 aubergine 1/2 inch cubes
2 courgettes diced
1 red pepper diced
1 yellow pepper diced
4 large tomatoes diced
1/4 pint tomato juice
(or replace tomatoes and sauce with a tin of plum tomatoes- chopped)
1 tablespoon tomato puree
6-8 basil leaves (optional)

Method

  • In a large pan add 2-tablespoon olive oil
  • Sauté onion until soft without colour
  • Add garlic, then aubergines- cook for a few minutes and then add the courgettes and peppers, sauté for a few minutes and then add tomato and juice and season
  • Simmer for about 20-30 minutes until all the vegetables are well cooked
  • Stir in the puree, correct seasoning and serve with a sprinkling of torn basil leaves
