Tomato and Red Pepper Sauce
This is a really easy sauce, full of flavour and nutrition which can be used as a pizza topping, with pasta or as a sauce with your dinner. .
Preparation time: 10 minutes Quantity: Serves 4 - 6 Cooking time: 30 minutes
Ingredients
1 tin plum tomato
1 tin of water
2 onions - peeled and chopped
1 stick celery - chopped
3 red peppers - diced
2 cloves garlic - sliced
1 teaspoon paprika
¼ tub tomato puree (3 tablespoons)
salt and pepper
Method
- Put all ingredients except the puree in a large pot and simmer for 20 - 30 minutes until all the ingredients are soft
- Blend or liquidize
- Add the puree, stir and serve
- Taste, season and serve
- Will last in the fridge for 3 days or freeze for 3 months
