White Onion Soup
A stocky soup full of onions, a rich source of calcium as well as being good for the blood - so altogether a very healthy, nutritious, low calorie soup.
Preparation time: 5-10 minutes Quantity: Serves 2-3 Cooking time: 15 minutes
Ingredients
1 tablespoon olive oil
300g/ 10 oz white onions -peeled and sliced
2 clove garlic -crushed
1 tablespoon white wine vinegar
1 teaspoon white sugar
1&1/2 pints/850 ml veggie stock
(or 1 pint stock & 1/2 pint white wine)

Method
- Heat the oil
- Sauté the onions gently for several minutes to soften
- Add the garlic, vinegar and sugar and cook till light golden brown, stirring frequently
- Add the stock (and wine) bring to the boil then
simmer for 10 minutes
- Season to taste
- Boil for 1-2 minutes
- Serve
