Vegetable Mash
Preparation time: 15 minutes Quantity: Serves 4 -5 Cooking time: 30 - 45 minutes
Ingredients
2 medium carrots
1/2 medium swede
1-2 medium parsnip
2-3 small turnip
1 sweet potato (optional)
2 tablespoons Greek yogurt or (30g/1oz butter and 3 tablespoons hot milk)
Method
- Prepare vegetables and cut into chunks
- Bring to the boil in cold, salted water
or vegetable stock
- Simmer till soft and cooked (30-45 minutes, depending on size, heat and pan size)
- Strain
- Put back on a low flame and warm through to dry out 1-2 minutes
- Take of the heat and add yogurt or milk and butter
- Mash and serve
