Vegetable Mash

This is a great alternative for mashed potato and good if your watching the Carbohydrates.

Preparation time: 15 minutes   Quantity: Serves 4 -5   Cooking time: 30 - 45 minutes

Ingredients

2 medium carrots
1/2 medium swede
1-2 medium parsnip
2-3 small turnip
1 sweet potato (optional)
2 tablespoons Greek yogurt or (30g/1oz butter and 3 tablespoons hot milk)

Method

  • Prepare vegetables and cut into chunks
  • Bring to the boil in cold, salted water

or vegetable stock

  • Simmer till soft and cooked (30-45 minutes, depending on size, heat and pan size)
  • Strain
  • Put back on a low flame and warm through to dry out 1-2 minutes
  • Take of the heat and add yogurt or milk and butter
  • Mash and serve
