Roasted Rhubarb
Quick easy, healthy and reliable. Why always simmer rhubarb, this way the rhubarb stays chunky and adds texture with extra taste. Perfect with some Greek or Soya Yogurt.

Ingredients
3 - 4 rhubarb stalks - trimmed and cut in to 2” dice
1 teaspoon caster sugar
1 tablespoon maple syrup
1 tablespoon water
1/2 lemon, orange or lime juice
pinch allspice, cinnamon or nutmeg
Method
- Toss together all the ingredients
- Pour in to a roasting dish
- Bake in a pre-heated oven gas 6 / 200*c for 15 - 17 minutes (check after 12 to make sure it doesn’t dry out)
