Gluten Free Banana, Chocolate and Raisin Mini Pancakes

I used Doves Gluten free flour but plain flour works fine for Allergy free eaters! This works very well as a gluten free dish, the chocolate lends a richness and the bananas add protein therefor add to the bulk, some times lacking in gluten free cooking.

Preparation time: 10 minutes   Quantity: 6 - 8 mini pancakes   Cooking time: 10 minutes

Ingredients

2 heaped tablespoons gluten free flour
2 teaspoons cocoa powder
1 teaspoon baking powder (gluten free)
1 egg - small / medium
3 - 4 tablespoons milk or water
1/2 tablespoon any sugar
1 tablespoon raisins
1 banana - chopped small

oil or butter to fry

Method

  • Simply sift the flour, cocoa and baking powder
  • Whisk in the egg and enough milk to make a thick batter
  • Stir in the rest of the ingredients
  • Heat a pan with a thin coat of oil or butter
  • Fry of tablespoonful's until golden and firm on both sides (2 - 3 minutes on each side)
