Pancakes - Gluten Free

A gluten free alternative, for a dairy free alternative use rice or soy milk and egg substitute. Fill with your own choice, like bananas in brown sugar, lemon and ice-cream. But for breakfast try serving with lashings of maple syrup

Preparation time: 10 minutes   Quantity: Makes 8 or so pancakes   Cooking time: 15 - 20 minutes

Ingredients

60g / 2 oz potato flour
60g / 2 oz brown or white rice flour
1 small egg
300 ml / 1/2 pint any milk
oil to fry

Method

  • Sift the flours in to a bowl
  • Whisk in the egg and most of the milk
  • Whisk to form a thin, smooth pancake batter the consistency of single cream
  • Add all the milk if needed
  • Cook off- thin layers in a hot oiled frying pan until golden on both sides
