Jamaican Fried Dumplings
Known as Bakes and traditionally served with fried chicken in the Caribbean. For a variation fill each one before cooking, with something yummy either sweet or savoury like jam, chutney, cheese, pureed fruit, herbs, curried potato etc. etc. etc.
Preparation time: 20 - 30 minutes Quantity: Makes 8 - 10 Cooking time: 12 minutes
Ingredients
450g / 1 lb. self raising flour - sifted
2 teaspoons caster sugar
1/2 teaspoon salt
1/2 pint / 300 ml warm milk
Method
- In a large bowl mix the flour, sugar and salt together
- Pour in the milk gradually, mixing all the time with a wooden spoon or your hands to form a dough
- Knead with your hands for 5 - 8 minutes till softer and more pliable
- Divide the dough in to 8 - 10 equal balls
- Roll the balls to make a neater ball and flatten slightly with the palm of your hand
- Deep fry on a medium heat till golden or panfry on a medium heat in an inch of oil turning once golden, cooking on both sides for approx. 12 -15 minutes in all
- If you cook them too quickly on too higher heat and there still doughy in the middle finish them of in the oven for 5 minutes or so
