A fiery hot dish full of spice and deep flavour, serve with fried dumplings and some rice ’n’ peas.

Ingredients

Jerk Seasoning -
1 teaspoon ground allspice
1 teaspoon chopped thyme
1 teaspoon onion flakes
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/2 teaspoon caster sugar
pinch ground nutmeg

The rest -
2 tablespoon vegetable oil
2 teaspoon red wine vinegar
1 fresh lime - juiced
1 clove crushed garlic

Chicken -
4 breasts or 8 drumsticks or 8 pieces of thigh and drumstick or 4 whole legs
(this dish works better with bone on meat)

Method

  • Mix all the ingredients for the jerk seasoning together
  • Add the rest and leave aside
  • Prepare the chicken by de-skinning and cutting little scores across the flesh to allow the marinade to seep in
  • Mix the marinade - as me old friend used to say “rub it to the bone” almost massaging it into the chicken
  • Leave to spice up, prefrably overnight
  • Bake in the oven for 30 minutes on gas 6 -7 / 200*c or B.B.Q till cooked in the middle
