Crab and Coconut Soup
Preparation time: 15 minutes Quantity: Serves 4 - 5 Cooking time: 20 minutes
Ingredients
2 tablespoon vegetable or olive oil
2 onion - finely chopped
2 celery stick - small diced
2 clove garlic - crushed
1/2 - 1 red chilli - finely chopped
4 plum tomatoes - small diced
2 pints / 1100 ml fish stock (or 1 cube and water)
100g block creamed coconut - grated
300g / 10 oz crab meat - brown and white
2 tablespoons coriander and stalks - chopped
1 lime juice

Method
- Heat the oil in a large saucepan
- Add the onion, celery and garlic
- Cook gently for a few minutes
- Add the chilli and tomatoes and cook for a minute
- Add the stock and simmer for 5 or so minutes
- Add the coconut cream and simmer for another 5 or so minutes
- Add the crab, coriander and lime juice
- Simmer for a minute to warm through
- Season to taste
