Spiced Sweet Potato Puree
A great side dish with grilled meats or add an egg and bread crumbs and fry in to sweet potato cakes and serve as a vegetarian main course with some roasted vegetables and grilled hallomi
Preparation time: 10 minutes Quantity: Serves 3-4 Cooking time: 10 minutes
Ingredients
450g / 1lb or so sweet potatoes
1 level teaspoon ground cumin, coriander and turmeric (optional)
1/2 red chilli - very finely chopped (or use 1 teaspoon of ground chilli)
30g / 1 oz butter
50 ml double cream or milk or coconut milk

Method
- Peel and dice the potatoes
- Steam (or boil) for 8-10 minutes until tender
- Place in a bowl or pan
- Mash (or rice - with a ricer)
- Add the spices and butter
- Stir in and then add the cream or milk
- Stir, taste to season and serve
- or add 1 egg and 3 tablespoons bread crumbs and shallow fry in patty shapes for spiced sweet potato cakes
