Curried Sweet Potato Fritters
Use the batter to fritter an assortment of vegetables like aubergines, mushrooms, courgettes, peppers and babycorn.
Serve with a dip like CookeryClubs Aoli or Tziki or sweet chilli sauce.

Ingredients
1 sweet potato - large
(or 2 medium)
Batter -
1/4 pint/150 ml milk
100g/ 4 oz plain flour
1/2 teaspoon each of turmeric, ground cumin, ground coriander, ground chilli
seasoning
oil to fry
Method
- Peel and cut the sweet potato in to chips approx. 3 cm long, 1/2 cm thick
- Steam or boil till just undercooked/ still firm and not squashy!
- Refresh under cold water to stop cooking
- Whisk all the ingredients for the batter together
- Dip the sweet potato in the batter and fry in hot oil till golden on both sides approx. 3-4 minutes
