Passion Fruit Puddings

What do you do with Passion fruits- try this and serve with Fresh Coconut ice-cream and a little fruit syrup.

Preparation time: 30 minutes   Quantity: Serves 4   Cooking time: 15 minutes

Ingredients

4 passion fruits
50g/ 2 oz butter-soft
100g/ 4 oz caster sugar
2 large egg yolks
50g/ 2 oz plain flour
300 ml/ 10 fl oz full fat milk
2 large egg whites

Method

  • Half the passion fruits, spoon out the flesh and juice -sieve or process and sieve - keep the juice -throw away the skin
  • Cream the butter and sugar together
  • Add the yolks and mix
  • Stir in the flour
  • Whisk in the milk and passion juice
  • Whip up the egg whites to a soft peek, meringue
  • Fold in to the milk mix
  • Spoon in to buttered and sugared individual dishes
  • Bake in a preheated oven gas 4/180*c/380*f - for 15 minutes, until set
