Sweet Potato, Rum and Raisin Loaf

Great with a spread of fruity jam.

Preparation time: 20 - 25 minutes   Quantity: Makes 10 - 12 slices   Cooking time: 1 hour

Ingredients

60 ml / 2 measures dark rum
90g / 3 oz raisins
450g / 1 lb. sweet potato mash
100g / 4 oz dark brown sugar
100g / 4 oz butter - softened
3 eggs - large
300g / 10 oz plain flour - sieved
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 fresh grated nutmeg (or powder equivalent)

Tip - to make sweet potato mash, simply steam or boil peeled sweet potato chunks for 10 - 12 minutes until soft. Drain well and mash .

Method

  • Soak the raisins in the rum and leave aside
  • Whisk the mash, sugar and butter together until well mixed
  • Add the eggs 1/2 at a time, beating all the time until well incorporated
  • With a wooden spoon fold in the flour and spice
  • Then stir in the soaked raisins
  • Spoon in to a greased 2 lb. loaf tin
  • Bake in a preheated oven, on the middle shelf gas 5 / 190*c / 375*f - for 1 hour or until cooked
