Pineapple Salsa
This goes really well with simple grilled meats or as a dip with Tacos or pan fry between two layers of floured tortillas (to make a Quastilla)
Preparation time: 10 minutes Quantity: Serves 3 - 6 Cooking time: no cooking required
Ingredients
60g / 2 oz fresh pineapple - small diced
2 plum tomatoes - diced (skinned -op)
1 red onion - finely diced
1/2 fresh avocado - small diced (optional)
1/2 red chilli - finely diced
1 tablespoon coriander leaves - chopped
2 tablespoon virgin olive oil
salt and pepper
Method
- Mix all the ingredients together with the olive oil and season to taste
