Kofta Alla Shish / Minced Lamb on Skewers
These kebabs although plain and simple are tasty but you could always add some fresh chilli to spice them up.
Preparation time: 10 minutes-1 hour resting time Quantity: Serves 3 Cooking time: 15-20 minutes
Ingredients
625g/1 ¼ lb minced fatty lamb
1 grated onion
1 bunch chopped flat parsley
Plenty of salt and pepper
Method
- Mix in a bowl first the lamb very well by hand almost kneading to break up the meat add all other ingredients
- Rest in a fridge for 1 hour
- Mould on to pre soaked sticks in a sausage shape
- Grill or fry turning as they brown until the meat is firm
- Variations; for a Moroccan flavour add ½ teaspoon cumin, cinnamon and paprika
