Malaysian Style Sausages Beef and Pork blended with Peanut, Coconut and Coriander

Malaysian food has a deep aromatic nature, slightly spicy but sweet and powerful.

Preparation time: 1 hour +   Quantity: Makes 8 - 10 portions   Cooking time: 10 - 15 minutes

Ingredients

200g minced beef
300g minced pork
1/3 tin coconut milk
1 tablespoons groundnut oil.
1 minced/ diced red onion
1 clove crushed garlic
1 teaspoon grated ginger
1/2 fresh green finely diced chilli
1/2 teaspoon ground coriander
2 tablespoons chopped coriander root and leaves
2 tablespoons smooth peanut butter
60g fresh breadcrumbs
1/2 teaspoon salt
15 twists black pepper

Method

  • Soak the both meats together in the coconut milk and the black pepper- preferably overnight or for 30 minutes or so
  • Heat up the oil and cook the onions - gently, to soften with out colour
  • Add the garlic, ginger, coriander powder and fresh chilli –cook for a minute and cool
  • Add to the mince marinated meats and mix in with your clean hands
  • Add all else and leave to infuse the flavour for at least 20 minutes or overnight
