Halloumi Cheese wrapped in Charred Aubergine
Halloumi is a Greek cheese made from goats or sheep's milk and originally preserved in salt water and wrapped in straw. Its taste and texture are unique and it’s perfect to panfry, B.B.Q, kebab or grill as it holds together and just browns lightly
Preparation time: 20 minutes Quantity: Serves 4 starter sized Cooking time: 20 - 25 minutes in total
Ingredients
1 block Halloumi cheese
1 aubergine
1 bunch basil or parsley
3 sliced tomatoes (optional)
oil for brushing
Method
- Cut the halloumi in to slices
- Cut an aubergine in to long, 1/2 cm slices (cutting from tail to top)
- Brush with olive oil, panfry or grill till soft and light brown on both sides
- Wrap each slice of halloumi, topped with a basil leaf or flat parsley, optional a slice of tomato and wrap round with an aubergine slice
- Hold together with a cocktail stick
- Char-grill or B.B.Q till golden and charred on all sides and warm in the middle.
