Lamb Chops in Balsamic Marinade
A simply dinner, marinade the night before and just grill for a few minutes on each side and serve with a salad or some fresh steamed vegetables and a touch of mint jelly.

Ingredients
6 lamb chops
Marinade -
2-3 tablespoons balsamic vinegar
1 clove garlic crushed
1 tablespoon mint chopped
few twists black pepper
1 teaspoon olive oil
Method
- Slit the lamb chop sides, with a knife making slits across the fat from side to side
- Mix all the ingredients for the marinade together
- Pour over the lamb chops and allow to marinade for minimum 20 minutes or overnight
- Heat the grill and grill the lamb chops for 2-4 minutes on each side (depending on whether you like them pink or well cooked)
