Lamb Meatballs in Tomato Sauce - Tapas
Meatballs can be served with Pasta, bound in tomato Sauce, or spiced with fresh chilli or baked in a cheese sauce or even thread on to kebab sticks and griddled.
Preparation time: 20 -25 minutes Quantity: Serves 4-5 Cooking time: 15-20 minutes
Ingredients
1 lot tomato sauce
450g / 1lb minced lamb
1 tablespoon chopped parsley
1/2 teaspoon chopped oregano
1 red onion finely diced
1 teaspoon smoked paprika
1 large egg
60g / 2oz breadcrumbs
2 tablespoons tomato puree

Method
- In a mixing bowl add the minced lamb, spices, herbs and onions and mix well
- Add the egg and crumbs, season and mix
- Mould in to small 2cm /1in balls, sauté until cooked or oven bake for approximately 20 minutes Gas 6 / 200*c / 400*f
- Finish by pouring on some of your lovely home made tomato sauce
