Banbury Cakes
Preparation time: 30 minutes Quantity: Makes 16 cakes Cooking time: 10-12 minutes
Ingredients
500g /1 lb puff pastry rolled and cut in to 16 espresso saucer sized circles.
60g/ 2 oz butter
120g/ 4 oz raisins
120g/ 4 oz currents
60g/ 2 oz mixed peel
120g/ 4 oz demerara sugar
1 teaspoon mixed spice
1/2 teaspoon grated lemon zest
Method
- Melt the butter, add all else and mix
- Divide the mixture between the rounds, fold over and push down edges (for pasties)
- Cut three slashes on top and brush with egg wash
- Sprinkle with sugar and bake till golden
