Ginger Parkin

A classic Northern British Cake, often sliced and spread thickly with real butter.

Preparation time: 20 minutes   Quantity: Serves 8-10   Cooking time: 1 hour

Ingredients

120g/ 4 oz self raising flour
1 level teaspoon bicarbonate of soda
60g/ 2 oz butter
90g/ 3 oz oats
30g/ 1 oz sugar
2 teaspoons ground ginger
2 tablespoons golden syrup
5 tablespoons milk

Method

  • Sift the flour and bicarbonate of soda, rub in the butter, add everything else - beat well
  • Pour in to a 7 inch cake tin
  • Bake in a pre heated oven gas 5/200*c/400*f - for 50 -60 minutes
