Ginger Parkin

Ingredients
120g/ 4 oz self raising flour
1 level teaspoon bicarbonate of soda
60g/ 2 oz butter
90g/ 3 oz oats
30g/ 1 oz sugar
2 teaspoons ground ginger
2 tablespoons golden syrup
5 tablespoons milk
Method
- Sift the flour and bicarbonate of soda, rub in the butter, add everything else - beat well
- Pour in to a 7 inch cake tin
- Bake in a pre heated oven gas 5/200*c/400*f - for 50 -60 minutes
