Another variation of mash and the children love it.

Preparation time: 10-15 minutes   Quantity: Serves 3 - 4 or a topping for 6 portion Shepherds Pie   Cooking time: 35 - 45 minutes

Ingredients

2 lb/1k of large un-waxy potatoes
2-3 tablespoons of Greek yogurt
1/4 pint milk
salt and pepper
2 oz / 60g grated mature cheese

Method

  • Peel and wash potatoes
  • Cut them in to 3-4 smaller pieces
  • Cover in a pan with cold salted water.
  • Bring to the boil and simmer till just soft 35- 45 minutes
  • Strain off all the water and put the dried potatoes back on to a low heat, warm through and add milk bring to a bubble and turn of the heat
  • Mash and season well – add Greek yoghurt to make them creamier
  • Stir in cheese, spoon in to a dish and top with more grated cheese
  • Grill until melted and golden
