Apple Fruit Cake

Apples add a moistness to cakes that make them moorish. This cake could be served for a dinner party with spiced Ice-Cream and a toffee sauce.

Preparation time: 20 minutes   Quantity: Serves 10-12   Cooking time: 1 1/4 hours

Ingredients

340g/ 12 oz self raising flour
120g/ 4 oz butter
120g/ 4 oz sugar
2-3 tablespoons full fat milk
1 teaspoon ground cinnamon
250g/ 8 oz grated apple
90g/3oz raisins
1 medium egg
30g/ 1 oz soft brown sugar

Method

  • Sift the flour and rub in the butter
  • Add all else and enough milk to form a thick, smooth batter
  • Spoon in to a 8 inch tin
  • Sprinkle with the brown sugar
  • Bake in a pre heated oven gas 4/

180*c/350*f for 1-1&1/4 hours or until cooked
