A very easy sweet dessert. With a taste almost like toffee. We used to set it all day in a hot plate- but you can use the oven on low - but just keep on checking it- take out when just set/firm in the middle.

Preparation time: 10-15 minutes   Quantity: Serves 8   Cooking time: 1 hour

Ingredients

80g/ 3 oz melted butter
160g/ 6 oz crushed digestive biscuits
1 tin evaporated milk- chilled
500g soft brown sugar

Method

  • Make the base by melting the butter, crushing the biscuits and mixing together- push down in to a suitable tin/dish
  • Whisk the evaporated milk and sugar together vigourously for 10 minutes, till light, frothy and smooth
  • Pour in to the base
  • Place in a preheated oven Gas 2/150*c/ 275*f - for around an hour or until set (firm), check every 15 minutes


Recommended cake tin size -a loose bottom tin approx 8 inch
