Baked Rice Pudding

Good old rice pudding - serve with a splodge of strawberry jam. A perfect dessert for all the family.

Preparation time: minutes   Quantity: 4 - 5 (6 small)   Cooking time: 1 hour

Ingredients

3 pints milk (any - but full fat recommended)
150 g / 6 oz pudding rice
145 g / 5 oz caster sugar (or granulated)
pinch nutmeg
1 cinnamon stick or a pinch
30 g / 1 oz butter

Method

  • Preset the oven to gas 8 / 220*c / 440*f
  • Mix all the ingredients together in a suitable ovenproof dish

cover the rice pudding with a lid or tin foil

  • Bake for 15 minutes on the middle shelf
  • Remove from the oven and stir, place back in the oven
  • Turn the oven down to gas 5 / 190*c / 390*f for 20 minutes
  • Remove the lid and cook for a further 20 minutes
  • Serve
